J Boutaris & Son SA created the Boutari Santorini Winery in Megalochori, remaining faithful to its philosophy, which focuses on the best possible use of each region that produces wines with the superior quality now associated with Protected Designations of Origin (PDOs), using selected Greek varieties of grapes. The Boutari Winery in Santorini is one of Boutari's award-winning estates. It first opened in 1989 and since then has played a leading role in the development of the island's viticulture and the commercial development and promotion of Santorini wines worldwide. Planting began in the privately owned vineyard with an area of about 60 stremmata (about 15 acres), in 1992 and was completed two years later. The sparse planting of the estate, about 250 plants per stremma (or quarter acre), is typical. With its sandy, volcanic origin, the soil is covered with scoria, lava and pumice. These peculiar conditions lead to limited production but also good conditions for the grapes.
