The Gavalas family has dealt exclusively with the production of Santorini wine since the late 19th century. In the first two decades of the 20th century, they vinified the grapes they harvested from their privately owned vineyards at their winery (canava) in Megalochori. The wine was widely distributed in Alexandria, Egypt and Santorini. In the 1930s, the family began selling wine in Athens and Piraeus. In 1973, a shop in Peristeri was established from which the wines of the winery (Nychteri, Brousko, Mezzo, Mandilaria, and Vinsanto) are exclusively distributed throughout Greece. In 1998, the first wine was bottled at their small but modern winery in Megalochori. The winery can be visited with a guided tour (20 minutes, 5 euros per person).
